Start with the pie crust and coat the pie dish with the dough. You can also use a store-bought pie crust if you like. Rinse the mirabelle plums and remove the stems.
Remove the pits, the most easy way is to this with a cherry pitter. If you don't have any you can also use a small knife, but that will take much longer.
Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit.
Combine an egg with cream, vanilla extract, sugar and flour until you've reached a smooth mixture. Pour the mixture on the bottom of the pie crust and divide the pitted mirabelle plums on top.
Depending on the sweetness of the plums, you can add a little sugar on top. Bake the pie for about 30 minutes, the pie is ready when the dough is beautiful golden brown and the cream mixture is firm.
The exact time depends on your oven. If you're mirabelle plums are really ripe, the pie will be a bit more moist.
Some mirabelle plums are more sour than others, if that's the case you can dust some powdered sugar on top before serving. Enjoy!
