Crush the cardamom pods with something heavy or a mortar. Add them to a small saucepan along with the cinnamon stick, peppercorns and star anise. Add butter and melt slowly on low heat.
Stir in the honey, juice of the lemon and the squeezed lemon. Pre-heat the oven to 200 degrees Celsius or 390 degrees Fahrenheit.
Peel the pineapple, you can choose to chop it into smaller pieces and remove the hard center, this way the pineapple is done a lot quicker.
Add the pineapple in a small oven dish and pour the butter with spices on top. Roast the pineapple for about 20 minutes in the oven, turn it a couple of times and pour the butter mixture over it during baking so it will cook evenly.
Dust the pineapple with a thin layer of powdered sugar in the last 5 minutes of roasting to get an even prettier colour, because the sugar will caramelise.
Divide the warm pineapple into pieces and divide the hard center. Extra delicious with some vanilla ice cream! Enjoy!
