Peanut sauce stir fry

A deliciously aromatic peanut sauce with coconut milk, fresh ginger and lime. A great sauce for a great stir fry. Done in a pinch – less than 10 minutes!

Ingredients

  • 100 grams of smooth peanut butter
  • 35 ml coconut milk
  • Juice from half a lime
  • 2 cm fresh ginger (~0.8 inches)
  • 2 cloves of garlic
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon of dark brown sugar
  • 1 teaspoon of spicy sauce, e.g., sambal, harissa or sriracha
  • Water

Make the peanut sauce – 10 minutes

Use a spoon to peel the fresh ginger. Peel two cloves of garlic, then cut both the ginger and garlic coarsely. Juice half a lime and add this with the ginger and garlic to a blender.

Puree until smooth, then add a little boiled water to thin out the sauce. 

Not only is this peanut sauce excellent in a stir fry dish with steak and vegetables, but it is also a hit with other stir fry recipes. Enjoy!
