  • about 15 small firm pears
  • 1/2 liter dry white wine
  • 1 liter apple juice
  • 2 cinnamon sticks
  • 4 star anise pods
  • 200 gram sugar

Preparation -- 15 minutes

COMBINE the apple juice, white wine, sugar, cinnamon sticks and star anise in the medium-sized pan. PEEL the pears and remove a part of the core on the bottom.

During peeling it is recommended to place them into cold water with a little bit of lemon to prevent them from discolouring.

CREATE a round piece of parchment paper that fits exactly into the pan and cut a small hole in the middle.

Finishing the poached pears in apple juice -- 3 hours

PLACE the peeled pears into the apple juice mixture and COVER with the round piece of parchment paper. Don't let it come to a boil and simmer on low heat for about 2,5 to 3 hours.

Or until the pears are softened enough, you can easily check this with a sharp small knife. Enjoy this lovely poached pears with ice cream for a perfect autumn dessert. Or even as a side dish for meat.
