Puerto Rico style beans vegan

This delicious weekday vegetarian meal is packed with flavor and easy to make. Puerto Rican style beans are great with rice.

These Puerto Rican style beans are full of flavor with olives, tomatoes, potatoes, and spices. Sazón seasoning is a popular spice mix from South America, and you can make it yourself if needed.

If you're using dried pinto beans, you need to soak them overnight in cold water first. Then, cook the beans in boiling water until they are tender, which will take about 1 hour, but the exact time depends on the beans and their age. Older beans will take a little longer to cook.

Preparation – 15 minutes

You can skip pre-cooking the potatoes, but it will take longer for the potatoes to cook during the preparation.

Fill a medium-size pan with water and bring to a boil. Peel the potatoes and cut them into pieces, not too small. Boil the potatoes for 5 minutes, then remove them from the water.

Peel and finely chop the onion and garlic. Roughly chop the stuffed olives.

Making Puerto Rican Style Beans – 30 minutes

Heat a splash of olive oil in a large frying pan or Dutch oven. Sauté the onion and garlic until the onion becomes translucent.

Add the potatoes and cook for another 2 minutes. Add the Sazón seasoning and cook for 1 more minute.

Add passata along with 200 ml of broth (or water), the (pre-cooked) potatoes, olives, and 800 grams of beans.

Let it simmer for about 15 minutes over medium-low heat until the potatoes are cooked and the sauce has thickened.

Season with salt and possibly more spices. Serve with rice and finely chopped fresh cilantro or parsley. Enjoy!

What are pinto beans?

Pinto beans are also known as (light) speckled kidney beans beans or borlotti beans. Although borlotti beans aren't exactly the same. They look beautiful when raw, white-pink with a dark red pattern. This pattern disappears completely during cooking, leaving you with a red-brown bean.

Pinto beans have a slightly nutty flavor with a sweet undertone.

What is Sazón seasoning?

Sazón seasoning originate from Puerto Rico. It’s also known as Sazón Goya, but Goya refers only to a brand, not a specific type of spice mix. Sazón Goya seasoning contains MSG, which is why many people prefer to use another brand or make the spice mix themselves.
