Pre-heat the oven to 180 degrees celsius or 350 fahrenheit. Place the whole chicken in the oven dish and drizzle with lots of olive oil, pepper, and salt. Place the whole garlic cloves and thyme sprigs around the chicken in the oven dish.
You're right, there's no need to peel all those garlic cloves. Pour the dry white wine inside the dish. That's it, there's not much prep work to do for this recipe!
