  • 1 teaspoon cocoa powder
  • 1 tablespoon desiccated coconut (unsweetened)

Making the sugar free coconut truffles 10 minutes

Cut the dates in half and remove the pits. Chop the dates into small chunks. This does not have to be very precise as everything is going to be well pureed with a stick blender.

Put the date chunks in the blender cup along with a teaspoon of cocoa powder and a tablespoon of desiccated coconut.

Puree the dates for a minute to a fine paste. Sprinkle some desiccated coconut over a small plate.

Roll the date mixture into small balls in the palm of your hand, then roll them in the desiccated coconut. Place the sugar free coconut truffles on a plate and serve immediately.
