Peel the ginger root, the most easy way to do this is using a spoon. Pressing your thumb onto the spoon while you grate the peel downwards. Finely grate the ginger root using a grater.
Peel and finely chop the garlic clove and add it to the bowl along with the grated ginger.
Add 2 tablespoons sunflower oil, 2 tablespoons vinegar, 3 tablespoons tomato ketchup, 2 tablespoons soy sauce and 1 tablespoon light brown caster sugar to the bowl and combine well with a fork.
Add 1 tablespoon of cornstarch with a little bit of water in a small bowl and combine well. If you're using cornstarch directly to the sauce, you'll probably end up with lumps.
Heat the sauce on medium-high heat for a few minutes, keep on stirring slowly with a wooden spoon.
Gradually add the cornstarch mixture to the sauce and keep on stirring until you've reached the desired thickness.
Turn off the heat and use the sauce in a delicious stir-fry with all kinds of veggies, meat and noodles or rice of your choice, enjoy!
