Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit. Peel the sweet potato and slice it into thin slices. We used a mandoline to make it a very fast task.
You can also use a chef's knife. If the slices aren't really thin, that's okay, but try to cut them into equal slices.
Melt the butter in the small saucepan. Use only the thyme leaves, add them to the butter and season with pepper and salt. Now use the kitchen brush to coat both sides of the sweet potato slices.
Stack them, about the same size for one stack, until all the slices are used. Cook the sweet potato stacks in the oven for about 15 minutes.
