Finely cut the onion and garlic clove. Use a mushroom brush or paper kitchen towel to clean the mushrooms and cut them into thin slices.
PEEL the carrots and slice them into pieces, not too thin.
You can use a Dutch oven to cook the stew, but we decided to cook this particular stew in our crockpot. We added the wild boar, red wine, game stock, chopped onion, garlic, carrots and chestnut mushrooms to the slow cooker.
We finished it off with the herbs; rosemary, sage, thyme, juniper berries, pepper and salt. Set the crockpot for 3,5 hours and wait until the meat is juicy, tender and filled with deliciousness.
Serve with a green salad of your choice and fries or mashed potatoes.
