Pre-heat the oven to a temperature of 170 degrees celsius or 340 degrees fahrenheit. Wash the apples, then peel them using a potato peeler or small paring knife.
Core and finely dice the apples. Squeeze some lemon juice over the diced apple to keep it from browning. Mix flour with the sugar, vanilla sugar, and baking powder in one of the large bowls.
Mix the egg with the sunflower oil, greek yogurt, and diced apple into the other large bowl. Combine the flour mixture with the apple mixture using a silicone spatula.
Pour the mixture into the muffin tin and bake the creamy apple muffins in the oven for 45 minutes. Poke a wooden skewer through the middle of the muffin.
The muffins are done when nothing sticks to the skewer. Serve with loads of powdered sugar, enjoy!
