REMOVE the ends of the green beans. PEEL the red onion and slice into thin (half) rings.
PLACE the wok onto high heat and when it starts to smoke, ADD some olive oil. Stir-fry the beans for a few minutes. POUR in the water, this way the beans will cook without pre-cooking them first so it's a single pan dish.
As soon as the water has evaporated, ADD the red onion and cook a few minutes more. ADD the curry powder and cashews, SEASON with pepper and salt. FINISH the dish with some grated goat's cheese. Enjoy!
