These bokkenpootjes (Dutch goat's feet biscuit) desserts are easy to make and perfect for autumn, showcasing perfectly ripe pears. Chocolate, almonds and pairs are a match made in heaven.

There is no need to flavour the pear mascarpone with sugar or any other sweetener, as the ripe pears and bokkenpootjes are sweet enough already.

Use fairly ripe pears, as you cannot mash pears which are too hard very easily. More importantly, ripe pears have more flavour, and are sweeter, than underripe ones.

Making the Dutch goat's feet biscuit desserts – 15 minutes

Peel the pears and remove the cores. Purée 4 pears into a smooth paste; you can do this with a stick blender or in a (small) standard blender/food processor. Chop the remaining 2 pears into small chunks.

Whip 150 ml of cream until it is quite firm, but not too stiff. Stir in the mascarpone through the pear purée, mixing until smooth. Do not stir for too long or the mascarpone will liquefy.

Coarsely chop the bokkenpootjes then layer the pear mascarpone, pear pieces and biscuits in your serving glasses.

Make chocolate curls by scraping over a bar of chocolate with a small knife, working from back to front to create attractive curls. Alternatively, you can grate the chocolate. Garnish the pear desserts with the chocolate. Enjoy!
