tip: you can also use lemon curd instead of lime curd.
Wash and hull the strawberries, then halve them. Wash the blueberries and crush the dry biscuits.
The easiest way is to put them in a ziplock bag and crush them with a rolling pin.
Beat the coconut cream with an electric mixer until it is stiff. You may add a little sugar, but it’s not necessary.
Layer the bottom of the glasses with some biscuit crumbs, followed by strawberries, blueberries, coconut cream, then lime curd. Repeat with biscuit crumbs, strawberries, blueberries, etc.
Garnish with some nougatine pieces, and make chocolate shavings by scraping a bar of chocolate with a knife.
You can make these desserts in advance and keep them in the fridge. Please note that the biscuits and nougatine nuts will soften. Enjoy!
Where can I buy coconut cream?
You can buy coconut cream at many (larger) supermarkets and at Asian supermarkets.
How can I whip the coconut cream?
You can easily whip coconut cream with an electric mixer, just like standard whipping cream. You can also whip the thick part of coconut milk, but this will be less stiff and will collapse again quite quickly.
