A deliciously creamy and soft panna cotta with vanilla and the sweetest mango. Even better with small pieces of mango for some texture, a perfect contrast to the soft panna cotta.
A vanilla panna cotta has a silky smooth texture with a full flavour that is gently sweet. The sweet mango gives this dessert an exotic twist and the riper the mango, the sweeter it will taste.
This dessert is quick to prepare and needs only a few ingredients. You can make it completely ahead of time, which makes it perfect for a dinner party or a summer barbecue.

Heat the milk, cream and sugar in a small saucepan, but make sure it doesn’t start boiling.
Place the gelatin leaves in cold water until they are soft, then stir them into the warm milk and cream mixture.
Add 1 teaspoon of vanilla extract and let the mixture cool down a bit, to about room temperature.
If you want to pour the panna cotta into the glass at an angle, it's best to place the glasses tilted in the holes of a muffin tin.

Then divide the mixture between the glasses and carefully place them in the fridge. Let the panna cotta set in the fridge for at least 1 hour.
Meanwhile, peel the mangoes. You can choose to blend both mangoes, but I personally like it better with small mango pieces for texture.
Cut half of the mango into small cubes and blend the rest of the mango.

Mix the mango puree with the cubes. If the mango isn't sweet enough, you can add a little honey, agave syrup, or icing sugar.
Spoon the mango on top of the panna cotta and garnish with a small sprig of fresh mint. Enjoy!
Can I make panna cotta ahead of time?
Yes, you can easily make panna cotta 1 or 2 days in advance. You can even add the mango topping a day before serving.
How long can I store panna cotta?
You can store panna cotta in the fridge for up to 3 days. If you want to store it longer, you can freeze it, but that may affect flavor and texture.
