Wash the tomatoes, remove the crowns and the hard part and cut the tomatoes into thin half-moons. Cut the mozzarella into half thin slices.
Preheat the oven to 180 degrees celsius.
Slash the chicken breasts about 6 times across their width, but do not cut them all the way through. If the chicken breasts are on the smaller side, make fewer incisions.
Season the chicken breasts with salt, pepper and herbes de provence. Spread a small amount of pesto into each cut in the chicken. Place a small slice of tomato and mozzarella in each groove.
Sprinkle a little finely grated parmesan cheese over the stuffed chicken breasts and bake the chicken caprese until golden brown and cooked through about 20 minutes. The exact baking time depends on the oven and the size of the chicken breasts.
If the tomatoes are very juicy, a layer of moisture will have formed at the bottom of the baking dish. This is fine. Lift the chicken breasts out of the oven dish and serve with a little good quality olive oil and fresh basil. Enjoy your dinner!

Roast potatoes and a simple salad, or boiled broccoli, go well with chicken Caprese. It’s also very tasty with pasta or rice.
Can I make chicken Caprese in an air fryer?
You can make chicken Caprese in an air fryer. The cooking method is then the same as in the oven. The cooking time will probably be shorter as the heating element is closer to the baking dish than in a regular oven.
