Oven-roasted green asparagus are easy and ready in no time, because you don’t want them to get too soft. Green asparagus tastes best when they are still a bit crunchy. It has a nutty flavour that most people enjoy, but it’s only in season for a short time. That’s a good reason to eat them often in spring: grilled, in a pasta, or a risotto—green asparagus are always a good idea.

Oven-roasted asparagus – 20 minutes
Preheat the oven to 190 degrees Celsius.
Wash the asparagus if needed and remove the tough ends. You can cut off about 2 cm from the bottom or snap it off. The asparagus will break right where it starts to get woody.
Usually, there's no need to peel green asparagus, but some times it's recommended if the asparagus are older or very thick. Thick ones can get stringy.

Divide the asparagus on a small baking tray and drizzle with olive oil. Season with salt and pepper, and sprinkle a handful of finely grated Parmesan cheese over the asparagus.
Roast the asparagus in the oven for about 15 minutes. The exact time depends on your oven and how thick the asparagus are. They taste best when they are still a little crunchy.
Finish with the zest of half a lemon and serve right away. Enjoy!
Do I need to peel green asparagus?
Thin and fresh green asparagus don’t need to be peeled. But if they’re thick or a bit older, it’s best to peel them, because they can be stringy.
