Preheat the oven to 200 degrees celsius.
Peel the carrots, discard the ends and roughly chop the carrots. Mix the carrots with a good glug of olive oil, 3 tablespoons of honey, salt and pepper to taste.
Spread out the carrots on a baking tray or large baking dish. Roast the carrots for about 20 - 25 minutes, the exact time depends on the oven and the size of the carrot pieces.
Turn the carrots occasionally. They are done when they start to caramelise slightly and become al dente.
Meanwhile, finely chop the parsley and garnish the roasted carrots with it before serving. Enjoy your meal!
Which carrots can I use for roasting?
You can use all kinds of carrots for roasting, the thickness determines the oven time. For example, regular orange carrots or purple carrots.
What can I replace honey with?
You can use maple syrup instead of honey.
