You can cook the potatoes with or without skin. You can cook them without skin and chop them afterwards, or already into pieces. Or cook them with skin and peel and chop them up afterwards.
It's up to you. Cook them in boiling water, exact time depends on the size of the potatoes or potato pieces. Drain them and let them cool off a bit before you chop them into slices.
Create a mixture of the mayonnaise, quark and finely chopped onion or shallot and chives in a large bowl. Season with pepper and salt.
As soon as the slices of potatoes are cooled off completely you can add them to the mayonnaise mixture. Season again if necessary.
This salad is even better when made in advance cause the flavours will enhance after a few hours. But it's not necessary, you can also serve this amazing and simple potato salad immediately. Enjoy!
