This savoury beetroot galette makes a delicious lunch dish. With a simple pastry dough, beetroot and goat cheese, you don't even need a tart dish to make this galette.
You can fill a galette with either a sweet or a savoury filling; they are often filled with fruit. The pastry rim is folded over the edge of the filling, so you don't need a tart dish or pie tin.
This galette is made from a simple pastry made from flour, butter and water. In sweet versions, sugar is added to the pastry; for a savoury galette, you omit the sugar.
Red beetroot is a healthy and tasty vegetable. It contains a lot of fibre, minerals and vitamins, among other things. You could use yellow beetroot or candy striped beetroot, if you prefer.

Mix the flour and a pinch of salt in the bowl of your stand mixer. Cut the cold butter into cubes, straight from the fridge. Add the cubed butter, bit by bit, to the flour mixture and mix on medium-high speed until a sandy dough forms.
Carefully add the iced water and keep mixing until a dough forms. If it has not come together as a nice ball, you can knead it briefly with your hands. Wrap the pastry dough in cling film and place it in the fridge for about half an hour.
Meanwhile, cut the cooked beetroot into thick slices. Preheat the oven to 190 degrees Celsius.
Dust your work surface and rolling pin with flour and roll out the pastry into a circle. The pastry should not be too thick, but not too thin either.
Lay the slices of beetroot in the centre and season with salt, pepper and a tablespoon of honey. Fold the pastry inwards, press down well, and sprinkle the border with finely grated Parmesan cheese.
Bake the galette in the oven for around 30 to 40 minutes; the exact baking time depends on your oven and the thickness of the pastry. The pastry is ready when it is nicely golden brown.
Garnish the savoury galette with soft goat cheese, fresh sage and balsamic cream. Serve with a green salad. Enjoy!
What is a galette?
A galette is a pie consisting of pastry and a filling, which usually includes fruit. You can replace the fruit with vegetables for a savoury galette.
The pastry is partly folded over the filling, so no dish or tin is needed; it is a really simple pie to make.
There are also Breton galettes, which are completely different from standard pie-shaped galettes. These are savoury crêpes (thin pancakes) made from buckwheat flour, among other ingredients, and are a speciality from Brittany in France.
What fillings work well in a savoury galette?
Besides beetroot, you can fill a savoury galette with sautéed mushrooms, roast pumpkin, grilled courgette or other grilled vegetables.
