If you use frozen scampi, make sure you unfreeze them before starting to peel the waxy potatoes. Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit.
Peel the potato using the potato peeler. Potatoes will start to colour brown very fast, so it's recommended to place the potatoes in cold water. Place the potato onto the spiralizer and create potato spaghetti.
Wrap each scampi with the potato spaghetti, be careful it won't break. It will get easier after the first scampi, you will get the hang if it very soon. That's all there is, so now carefully lay them onto the oven dish.
Drizzle with olive oil and season with pepper and salt.
Place the oven dish in the oven for about 8 to 10 minutes. You'll see when they're ready if the potato is a bit golden brown and crispy. You can also fry the scampi, but we like the more easy and healthier version in the oven.
Very easy and great-looking snack, lovely for parties or use it as part of a starter.
