Tomato and vegetable soup is a familiar canned option, but it is easy to make your own version so that you can enjoy a delicious fresh soup full of vegetables.
You can add any vegetables of your choice. For example, you can leave out the celery if you are not a fan of it, or add rings of leek. If you want a really easy soup, you can use a bag of prepared soup vegetables. Your soup will be just as tasty, but almost effortless as you won't have to chop anything.
For the tastiest soup, use flavoursome tomatoes, preferably sun-ripened. For a quicker version, you can use canned tomatoes. For a non-vegetarian version, you can add small meatballs; use mini soup meatballs which are packed with flavour and make this dish just that little bit more filling.

It is preferable to peel the tomatoes, to avoid including their skins in the soup. You can read exactly how best to do this here.
Peel the onion and chop it finely. Wash the courgette/zucchini, remove the ends and cut it into small dice. Wash the celery and cut the stalks into chinks. Coarsely chop the celery leaves.
Heat a splash of olive oil in a large saucepan and sauté the onion for a few minutes. Once the onion has become translucent, add the courgette/zucchini and celery.
Add the peeled tomatoes and 1.5 litres of water, along with 2 stock cubes. Bring the soup to a boil, then add the peas and celery leaves.
Reduce the heat to low and let the soup simmer for around 20 minutes to allow the flavours to blend and the vegetables to cook.
Add the vermicelli and cook for a few more minutes until done. Season the soup with salt and pepper. Enjoy!
