This vegetarian traybake is an easy weekday meal, because the oven does all the work. This traybake is really tasty, and showcases halloumi along with pesto, garlic and broccoli.
A traybake is in essence a one pot dish, but cooked in the oven rather than on the hob. It is a complete meal on 1 tray, ideal to serve up on hectic days, as the oven does most of the work.
This vegetarian traybake with halloumi, broccoli, potatoes and pesto makes a complete meal without meat or fish. There is no need to include meat substitutes either, as the inclusion of savoury halloumi is more than satisfying. It's a really hearty cheese which is full of flavour and has a pleasing texture.
You can, optionally, add beans to this traybake to make the meal extra filling. Do not cut the vegetables too coarsely for traybakes, or they will not cook evenly. Preheat the oven to 180 degrees Celsius.
Break the broccoli into florets, not too small. Remove the seeds from the peppers, and cut them into chunks.
Remove the green stalks and hard core from the fennel and cut the bulb into pieces, not too coarse. Wash the potatoes and cut them into slices, not too thick.
Peel the garlic cloves and cut them in half. Peel the red onion and cut it into chunks.
Mix the broccoli, pepper, fennel, potato and garlic in a large bowl. Add the pesto, along with a splash of olive oil, and season with black pepper and salt.
Scatter the vegetables over a baking tray. Slice the halloumi and stir it around the bowl with the remnants of the pesto in it.
Dot the halloumi and pieces of red onion over the vegetables, then bake until golden brown and cooked through (around half an hour). Enjoy your meal!
Which vegetables can I use for a traybake?
You can use many different vegetables for a traybake, such as pepper, fennel, pumpkin, broccoli, sweet potato, courgette and aubergine.
Keep in mind that some vegetables are hard and will have a long cooking time. This makes tougher vegetables less suitable, unless you cut them smaller.
What type of sauce goes well with a traybake?
You could serve a creamy yoghurt sauce with a traybake, but this is not really necessary as pesto, or a marinade, is often used to flavour the vegetables and other ingredients.
