Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
Cut the romanesco into nice florets, making sure they are about the same size so they cook evenly.
Place the florets on a baking sheet, it’s not necessary to line it with parchment paper.
Drizzle with a generous amount of olive oil, add salt and pepper to taste, and sprinkle about 1 teaspoon of curry powder on top.
