A traybake is a tempting baking tray full of a variety of tasty ingredients which you can easily get to the oven. With minimal effort and time, you can put a delicious meal on the table. Peel the pumpkin, remove the seeds, and cut the flesh into chunks. Make sure the pumpkin pieces are not too large or too thick, or they will not cook in the same time as the other ingredients.
Top and tail the courgettes/zucchini and cut them into half moons. Peel the red onion and cut it into wedges. Peel the garlic cloves and leave them whole.
Preheat the oven to a temperature of 180 degrees Celsius (350 degrees Fahrenheit).
Mix the pumpkin and courgette pieces with 1 teaspoon of cayenne pepper, half a teaspoon of ground cumin and 1 teaspoon of cinnamon. Season with salt and black pepper and drizzle with olive oil.
