Cannelloni is a type of stuffed pasta that you can fill with whatever you like. These vegetarian cannelloni are filled with a mixture of goat cheese, zucchini, mushrooms, walnuts and a hint of lemon.

A perfect combination with rich flavors of tomato sauce and 3 types of cheese: soft goat cheese, mascarpone, and Parmesan cheese. An authentic Italian dish!

Preparation – 15 minutes

Peel and finely chop the red onion. If necessary, crack the walnuts and chop them into small pieces.

Clean the mushrooms with a mushroom brush or a piece of kitchen paper towel.

Then finely chop the mushrooms, making sure the pieces aren't too large, as it will be difficult to stuff the cannelloni.

Remove the ends of the zucchini and cut it into very small cubes, again making sure they’re small to make filling easier.

Making Cannelloni with Goat Cheese and Zucchini – 1 hour

Heat a splash of olive oil in a large frying pan and cook the mushrooms for a few minutes.

Add the red onion and cook for a few more minutes until the onion becomes translucent.

Cook the zucchini for another 5 minutes and season with salt and pepper. Let the vegetables cool a bit.

Preheat the oven to 180 degrees Celsius or 355 degrees Fahrenheit.

Mix soft goat cheese with mascarpone and the zest of 1 lemon.

Add the cooked vegetables and chopped walnuts, and mix well. Season again with salt and pepper.

The easiest way to fill the cannelloni is to place the filling in a piping bag without a nozzle and use it to fill the pasta.

Season the passata with salt and pepper, then spread a thin layer over the bottom of a small baking dish.

Place the stuffed cannelloni on top and spread the remaining passata over them.

Top with a handful of grated Parmesan cheese and cover with aluminum foil.

Bake the cannelloni in the preheated oven for 20 minutes, then remove the foil. Bake for another 10 minutes, or until the cheese is golden brown. Enjoy!

Tips!

How many cannelloni per person?

For a main meal, you can serve about 6 to 8 cannelloni per person. For a lighter meal or for smaller eaters, you can go with 4 cannelloni per person.

Can I prepare cannelloni in advance?

You can prepare cannelloni in advance and reheat them in the oven or possibly in the microwave. You can also make them ahead and bake them the next day.
