Preparation -- 10 minutes

Pre-heat the oven to 160 degrees celsius or 320 degrees fahrenheit. Coat one side of a slice of bread with mustard. Place a slice of cheese, slice of ham and then again a slice of cheese on top.

Place the second slice of bread on top. Heat  a skillet and add a knob of butter. Cook the toastie on both sides for about 2-3 minutes.

Finishing the croque madame -- 10 minutes

Transfer the toastie to an oven tray lined with parchment paper. Bake in the oven for about 5 minutes, or until the cheese has beautifully melted.

Meanwhile fry an egg in the same skillet. Chop the parsley and set aside. Place the fried egg on top of the toastie and finish it off with chopped parsley. Enjoy!
