Start with the pizza dough, homemade dough needs some time to rise. Create a simple sauce by combining tomato paste with a little bit of water, that way it will be easier to divide.
Don't make the sauce too runny and season with pepper, salt and oregano. Remove the skin of the chorizo if needed and slice into slices, not too thin but also not too thick.
Rinse the cherry tomatoes and slice them into halves. Also slice the black olives into halves and divide the mozzarella into small pieces. Line an oven tray with parchment paper and pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit.
Dust your work surface and rolling-pin with flour and roll out the dough until it's quite thin. Use a round cookie cutter or glass to create tiny dough rounds. Knead the remaining dough and roll it out again, and cut out some more rounds.
Repeat until all the dough is used, i'll ended up with about 16 mini pizzas. Coat each round with tomato sauce and add some chorizo, cherry tomato and olive on top.
Finish with a bit of mozzarella and grated cheese. Don't use too much cheese otherwise it will all run off onto the oven tray. Transfer the mini pizzas to the oven tray lined with parchment paper and bake them beautiful golden brown in about 10 minutes. Enjoy!
