Orzo stuffed peppers vegetarian

Orzo stuffed peppers make a tasty vegetarian meal full of vegetables, which is also great for lunch. They’re flavoured with olives, thyme, cherry tomatoes and crunchy rocket salad.

Stuffed peppers are always a good idea. Try this vegetarian version filled with orzo, olives, and tomatoes for dinner or lunch.

For the best result it's recommended to roast the peppers before filling them, this makes them more flavourful. The nutty orzo pairs perfectly with the olives, tomatoes, cheese and rocket.

Preparation – 10 minutes

Peel and finely chop the red onion and garlic cloves.

Cut the black olives and cherry tomatoes in half.

Cut the peppers in half, keeping the stem on, and remove the seeds.

Preheat the oven to 190 degrees Celsius and line a baking tray with parchment paper if you like.

Making orzo stuffed peppers – 30 minutes

Heat a splash of olive oil in a deep frying pan. Fry the onion and garlic until the onion becomes translucent.

Add the orzo and fry for about 3 more minutes.

Pour in 400 ml of vegetable stock, lower the heat to medium, cover the pan, and stir now and then. Let the orzo absorb all the stock, this will take around 15 to 20 minutes.

Meanwhile, drizzle the halved peppers with olive oil and season with pepper and salt. Place them cut side down on a baking tray, and roast for 10 minutes.

If the orzo has absorbed all the stock but isn’t fully cooked, you can add a splash of water and let it cook a bit longer.

Stir the black olives, cherry tomatoes and 1 teaspoon of dried thyme into the orzo. Season with black pepper and salt.

Turn the peppers over and fill them with the orzo mixture. Finish with grated Parmesan cheese and bake for another 10 minutes.

Serve the orzo stuffed peppers with crunchy rocket. Enjoy!

Tips!

Should I roast the pepper before filling it?

You can fill the pepper without roasting, but it won’t be as flavourful. Roasting them before adding the filling makes the pepper softer and brings out more flavour.

How long can I store stuffed peppers?

You can store stuffed peppers in the fridge for up to 3 days. Reheat in the oven, air fryer or microwave.
