This Pornstar Martini ice cream is based on the popular cocktail with passion fruit. It's a fantastic homemade ice cream made with vanilla, Passoã, and lime.
For the full Pornstar Martini experience, you can pour champagne (or other sparkling wine) over the ice cream or serve it on the side, just like with the cocktail.
For the best result, it’s best to make this Pornstar Martini ice cream in an ice cream maker. That will give the ice cream its soft and creamy texture. You can also freeze it without a machine and stir it regularly during freezing, but the texture won’t be quite the same.

Heat milk, cream and vanilla extract in a medium-sized pan.
Whisk the egg yolks with the sugar until light and fluffy. It’s best to use an electric mixer for this.
Slowly pour the warm mixture into the egg yolks while you keep whisking. If you pour too fast or don’t whisk enough, the eggs will cook and form lumps.
Then pour the mixture back into the pan and cook it over low heat. Keep stirring to prevent it from burning.
A silicone spatula works best here, since it helps you scrape the bottom of the pan well.
You can tell the mixture is ready when you draw a line on the spatula with your finger and the line stays visible. Let it cool down a little.

Once the cream mixture has cooled a bit, add the pulp of 5 passion fruits, the zest of 2 limes and 60 ml Passoã.
Let the mixture cool down fully before pouring it into the ice cream maker.
Pour it into the machine and churn for about 40 minutes, depending on the type of ice cream maker you have.
Once it’s ready, scoop the ice cream into a container with a tight-fitting lid and place it in the freezer. Serve with extra passion fruit if you like and enjoy!
Can I make ice cream without an ice cream maker?
You can make ice cream without a machine, but it won’t have the same creamy texture you expect from real ice cream. You can pour the mixture into a container with a lid and stir it by hand every so often while it freezes. But since it doesn’t keep moving like it would in a machine, it won’t get that airy texture that makes ice cream soft.
My ice cream becomes hard, what now?
After freezing, homemade ice cream almost always becomes too hard to scoop. That’s because most freezers are colder than what’s ideal for ice cream.
So, take your ice cream out of the freezer about 15 minutes before you want to scoop it. That way, it softens up just enough.
