Pre-heat the oven to 200 degrees celsius or 390 degrees fahrenheit. Rinse the red beets with cold water and wrap them with tin foil along with the garlic clove.
You don't have to wrap them all individually, just create one package. Roast them in the oven for about 45 minutes. Let them cool off slightly so you can handle them with your hands.
To prevent your hands from becoming very pink, you can use gloves.
Peel the red beets and garlic clove and place them in the food processor. Drain the chick peas and also add them to the food processor along with the juice of half a lemon.
Pulse and add a few tablespoons of olive oil until the mixture is smooth. Season with pepper and salt and enjoy!
