  • ½ savoy cabbage
  • 250 grams of mushrooms
  • 700 grams potatoes
  • 500 grams mince (half beef, half pork)
  • ½ quantity Mexican herbs recipe
  • large handful of grated cheese
  • 100 ml cream
  • salt and pepper to taste
  • 1 tablespoon tomato purée
  • olive oil

Preparation – 20 minutes

Tip: you can also use pre-cooked potato slices, in which case you can skip the first step.

Fill a medium-sized saucepan with water and salt and bring to a boil. Peel and slice the potatoes. Cook the slices for around 10 minutes, until almost tender. The exact time depends on the thickness of the slices.

Wash the savoy cabbage and cut it into pieces that are not too big. Clean the mushrooms with a brush or kitchen paper, then slice them.

Finishing the Savoy cabbage bake – 1 hour

Heat a dash of olive oil in a large frying pan and fry the mushrooms until golden brown. Add the savoy cabbage and fry for about 10 minutes more. Stir occasionally, to prevent it from burning.

Turn the heat down to low, add the cream and a dash of water and place a lid on the frying pan. Let this cook gently for around 10 minutes.

Preheat the oven to 180 degrees celsius.

Meanwhile, heat a medium-sized frying pan over high heat and add a little olive oil. Fry the mince until browned, then add mexican herbs and tomato purée. Fry this for a few more minutes to de-acidify the tomato purée.

Take the lid off the pan of cabbage and let the moisture evaporate. Season the creamy cabbage with salt and pepper.

Spread the spicy mince over the oven dish and top with the cabbage and mushrooms.

Arrange the potato slices over the top and finish with a layer of grated cheese. Cook the savoy cabbage bake until golden brown (around half an hour). The exact baking time depends on the oven, among other things. Enjoy your meal!

How do you cut savoy cabbage?

Remove the outer leaves, then cut the cabbage in half and cut out the hardcore. Wash the savoy cabbage and then cut each half in half again so that you have 4 quarters. These can then be cut with a knife into coarse or fine pieces. You can also slice the cabbage into fine strips.

Is there a difference between savoy cabbage and green cabbage?

Sometimes the names are used interchangeably, but a savoy cabbage has dark, crinkled leaves. A regular green cabbage is similar to a white cabbage, with tightly wrapped, firm leaves.
