Peel and finely chop the garlic cloves. Wash the spinach if necessary and remove excess water with a salad spinner.
Heat a dash of olive oil in a medium sized frying pan and sauté the garlic for a minute. Add the fresh spinach in batches and turn off the heat once the spinach has wilted.
Place the spinach in a colander and squeeze out the moisture. Season the spinach with salt, pepper, a teaspoon of curry powder and a generous pinch of nutmeg.
Remove any excess fat and sinew from the chicken breasts and make a slit in each chicken breasts so that you can stuff them.
Preheat the oven to 180 degrees celsius.
Season the chicken breasts with salt and pepper and fill with the spinach. Cut the mozzarella into slices and place on top of the spinach.
Arrange 3 slices of bacon on the counter or on a chopping board in an overlapping manner. Close the slits in the chicken breasts and place them on the bacon slices. Wrap the stuffed chicken breasts, making sure they are completely covered with bacon.
Heat a dash of oil in a large frying pan and fry the chicken breasts until nicely browned on both sides. Transfer the chicken to an oven dish and bake the chicken until cooked through and the bacon crispy (20 minutes).
Serve the stuffed chicken breasts with, for example, roast potatoes and broccoli. Enjoy your meal!
Can I also use turkey?
Yes, you can replace the chicken breast with turkey breast.
Can I make stuffed chicken breast in an airfryer?
Yes, you can bake the chicken breast in the airfryer. The baking time will be slightly shorter than in a regular oven.
