Chop the walnuts and set them aside. Divide the truffle cheese into slices and also set them aside. Heat a grill pan on high heat and divide the baguette into slices.
Coat both sides of the slices of bread with olive oil and grill them until the grilling pattern appears on both sides.
Divide a grapefruit into slices and drizzle with a bit of honey on both sides. Grill the slices of grapefruit on both sides until the honey has caramelised.
Remove the peel of the grapefruit after grilling and divide the slices into halves. Start with truffle cheese on top of the grilled baguette slices and place a piece of grapefruit on top.
Finish with some chopped walnuts and a bit of extra honey. Enjoy!
