Preparation - 10 minutes

Rinse the parsley and sage if needed and remove any excess water. Add parsley and sage leaves to a small blender along with a dash of olive oil. Blend until it's quite smooth and add some more olive oil if needed.

Season the herbed oil with pepper and salt. Divide the feta into cubes, not too small, and combine with the herbed oil. You can marinate the feta, but that's not necessary.

Finishing the beet and feta skewers - 10 minutes

Meanwhile chop the beets into cubes, not too large. Season them with pepper and salt. You can also add a bit of balsamic vinegar if you like.

Start with a cherry, followed by a cube of beet, feta with herb oil and then another cube of beet. Repeat until all the ingredients are used, enjoy!

Cherries were out of season so we used half a green pitted olive. It was yummy!
