MAKE a vinaigrette by mixing the mustard with vinegar, pepper and salt until smooth in the small bowl. ADD a splash of olive oil while stirring with the whisk. THIS creates a nice and smooth vinaigrette.
The oil won't mix well with the moisture when adding it in too quickly. REMOVE the hard core of the chicory, then slice into thin strips.
IMMEDIATELY mix the chicory with the vinaigrette to prevent discolouration.
WASH the apple, then core. SLICe the apple in thin slices, mix through the chicory. The vinaigrette will prevent discolouration of the apple slices too. FINELY slice the chicory, mix into the salade.
TASTE and season with salt and pepper, but keep in mind that the flavours will have to set first. Enjoy!
