This mushroom and potato bake is an easy weekday meal full of flavour. Delicious with bacon and cheese, but for a vegetarian version, simply leave out the bacon.

Fill a medium-sized pot with water and a pinch of salt, then bring to a boil.
Peel the potatoes and slice them. Boil the slices until they are almost fully cooked, exact cooking time depends on how thick the slices are.
Meanwhile, peel and finely chop the onion and garlic.
Clean the mushrooms using a mushroom brush or a piece of kitchen paper, then slice them.

Heat a splash of olive oil in a large frying pan and fry part of the mushrooms until they are nicely browned. Don’t fry all the mushrooms at once, or they won’t cook properly.
Take the fried mushrooms out of the pan and repeat until all mushrooms are browned.
Heat the pan again and fry the bacon for about 3 minutes.
Add the onion and garlic and fry until the onion is translucent. Add the mushrooms back in and season with salt and pepper.
Preheat the oven to 180 degrees Celsius and grease an oven dish with butter or oil.
Divide half of the potato slices in a large oven dish. Then divide the mushroom mixture on top. Finish with the rest of the potato slices and try to make the top as flat as possible.
Whisk 2 eggs with 200 ml cream and 50 grams of Parmesan cheese. Season with salt and pepper, but remember that the cheese and bacon already contain salt.
Pour the cream mixture over the dish and sprinkle a little extra grated cheese on top.
Bake the mushroom and potato dish until fully cooked and golden brown in about 20–25 minutes. The exact baking time depends on your oven. Garnish with fresh parsley if you like. Enjoy!
Can I make the mushroom and potato bake ahead of time?
Yes, you can prepare the dish in advance and bake it later. You can also bake it first and reheat it later, just cover it with tin foil when reheating so the top won't burn.
Which potatoes are best for an oven dish?
It’s best to use waxy potatoes for an oven dish. They hold their shape well and won’t fall apart during cooking.
