Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit and line an oven tray with parchment paper. Melt butter in a small saucepan or microwave.
Peel the bananas and divide into slices. Coat the sheets of phyllo dough with butter and place a second sheet on top. Divide half a banana into slices on top of the phyllo dough, add a bit of powdered sugar and roll them tightly into a lumpia.
Repeat for the other phyllo rolls and coat the tops with butter. Bake the banana lumpias in the oven for about 10 minutes. Until they're crunchy and golden brown, the exact time depends of the oven.
Serve immediately, extra delicious with a scoop of vanilla ice cream. Enjoy!
