Preheat the oven to 190 degrees Celsius or 375 degrees Fahrenheit. Peel the pears and chop them into small cubes, make sure the pieces aren't too big otherwise the filo dough won't close nicely.
Chop the blue cheese into small pieces as well and combine the chopped cheese, pears and 1 teaspoon of nutmeg.
Melt the butter and divide the filo sheets into 2. Coat the sheets with melted butter and place two pieces on each other.
Place a spoonful of filling in the middle and fold the pastries inwards. Press them gently so they won't open during baking.
Inside the pear and blue cheese filo pastries, repeat until all the filling and filo sheets are used and coat them with a beaten egg.
Divide the almond shavings on top and bake the pastries in the oven for about 10 minutes or until golden brown. Enjoy!
