This strawberry pudding is a lovely summer treat served in a glass. You can leave out the crispy pastry threads for an easier version.
A creamy strawberry pudding is a simple dessert made with just a few ingredients. The crispy pastry threads add a nice texture, but even without them, the pudding made with milk and strawberry purée is still delicious.
Use sweet, ripe strawberries for the best pudding. If the strawberries are not soft enough, you’ll need to cook them first. But if they are very ripe, you can skip cooking and purée them directly.

Set aside 200 grams of strawberries. Place 400 grams of strawberries in a pan with 1 tablespoon of lemon juice and 75 grams of sugar.
Gently heat the strawberries and blend into a smooth purée using a blender or immersion blender.
Soak 4 gelatine sheets in cold water until soft, then stir them into the warm strawberry purée until dissolved.
Add 400 ml of milk and stir until smooth. Pour into 6 glasses and refrigerate for at least 2 hours to set.
Meanwhile, you can make the crispy pastry topping. Loosen the kadayif and mix it with melted butter. Fry in a large skillet until golden brown, then let it cool.
Cut the remaining 200 grams of strawberries into small pieces and divide them over the glasses. Top with the crispy pastry and serve right away. Enjoy!

You can use semi-skimmed or whole milk, but whole milk will give the creamiest result.
