Use an electric mixture to stir the butter until it's completely soft and add the sugar and orange juice. As soon as the mixture is smooth you can add the flour and finish the batter with almond shavings.
Place a piece of cling film on your work surface and transfer the batter to the middle. Create a roll and place in the freezer until it's completely frozen.
The reason we're doing this, is that it's very easy to create the thin cookies afterwards.
Pre-heat the oven to 175 degrees celsius or 350 degrees fahrenheit and line an oven tray with parchment paper. Use a sharp knife to create thin cookie slices.
Transfer them to the oven tray and make sure there's enough space in between the cookies. Bake the cookies until they're beautiful golden brown, that will take about 10 minutes.
The exact cooking time depends on your oven and also thickness if the cookies. Let them cool off completely, they will become crispy as soon as they cooled off. Enjoy!
