Ingredients
- 250 gram rice
- 2 garlic cloves
- 1 onion
- 1 teaspoon black mustard seeds
- 1 teaspoon yellow mustard seeds
- 1 cinnamon stick
- 3 cardamon pods
- 2 cloves
- 1/2 teaspoon coriander seeds
- 1 teaspoon turmeric
- salt to taste
- neutral oil, e.g. sunflower oil

Kitchen equipment needed
- cutting board & chef’s knife
- medium-sized pan
- fine sieve
- medium-sized skillet
- wooden spoon
Preparation — 10 minutes
Fill a medium-sized pan with water, bring to a boil and cook the rice. The exact time depends on the type of rice you’re using. Meanwhile peel and finely chop the onion and garlic cloves. Crush the cardamon pods, you can use a mortar or bottom of a pan to do this.

Finishing the fried rice with spices — 10 minutes
Heat olive oil in a skillet and sauté the onion and garlic for a few minutes along with a cinnamon stick, crushed cardamom pods and cloves.
Meanwhile drain the rice in a sieve. Add mustard seeds, turmeric and coriander seeds to the skillet and sauté very shortly. Add the rice and cook it a few minutes more. Season with salt and remove the cardamom pods, cinnamon stick and cloves. Serve this lovely side dish with some meat and a salad. Enjoy!
