An amazing combination of sweet pineapple and crunchy broccoli in these mini pineapple quiches. Ready in a bit more than half an hour.

  • 2 slices of pineapple (canned)
  • 200 ml heavy cream
  • 3 eggs
  • 1/4th onion
  • 100 gram broccoli
  • 1 garlic clove
  • butter for greasing
  • 1 recipe for savory pie crust
  • pepper and salt to taste

Preparation -- 15 minutes

Pre-heat the oven for 180 degrees Celsius or 350 degrees Fahrenheit. Chop 2 slices of pineapple into small pieces. Peel and finely chop the onion and garlic clove.

Divide a handful of broccoli into small florets. Combine 3 eggs with 200 ml heavy cream in a bowl and season with pepper and salt.

Finishing the mini pineapple quiches -- 20 minutes

Bake the mini quiches about 20 to 25 minutes in the oven, or until beautiful golden brown. The exact time depends on the oven and the size of the quiches.

Serve with some salad if you like, enjoy!
