Start with the béchamel sauce according to this recipe. PEEL and finely chop the onion and garlic cloves. PEEL and coarsely grate the carrots. HEAT olive oil in a large skillet and sauté the onion and garlic for a few minutes.
Add the ground beef and after another few minutes, also add the carrots along with the basil. Add in the tomato paste for a quick stir before you pour in the canned tomatoes.
Simmer for about 15 minutes on low heat. Season with pepper and salt, remove the basil leaves and let the filling cool off a bit. Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit and coat the oven dish with olive oil.
Fill each cannelloni with ground beef filling. Grab a piece of tin foil to hold the cannelloni and fill it with a teaspoon. Repeat until all the ingredients have been used and finish the filled cannelloni with a layer of béchamel sauce.
Finish with a layer of grated parmesan cheese and bake in the oven for about half an hour, or until the cheese is beautiful golden brown. Enjoy!
