Ingredients
- 4 medium-sized endives
- 200 gram ground beef
- 1 small egg
- 1 teaspoon mustard
- pepper and salt to taste
- about 2 tablespoons bread crumbs
- 8 slices of raw ham, e.g. Serrano – if you’re using thin slices it will be crunchier
- 4 small knobs of butter

Kitchen equipment needed
- medium-sized pan + slightly smaller lid
- small bowl
- cutting board & chef’s knife
- oven
- large oven dish
Preparation — 10 minutes
Fill a medium-sized pan with water and bring to a boil. Remove the ends of the endives and cook the endives for about 5 minutes in the boiling water. Place a slightly smaller lid on top, this way they’ll cook more evenly because they won’t float.
Meanwhile season the ground beef with pepper, salt, mustard, a small egg and a bit of bread crumbs. Don’t add too much bread crumbs otherwise the ground beef will be dry. Divide the ground beef into 4 equal parts and create small strips.
Pre-heat the oven to 200 degrees Celsius or 390 degrees Fahrenheit.

Finishing the oven baked endive and ham — 40 minutes
Transfer the endives from the water and drain them to get rid of any excess water. Chop them in half and place the meat strip in between. Press both halves of the endives together and place them in the middle of 2 slices of ham. Roll them quite tight, repeat for the other endives and place them in the oven dish. Place a small knob of butter on top of each endive.
Bake the endives stuffed with ground beef for about half an hour in the oven. Serve immediately with e.g. mashed potatoes, enjoy!
